Ingredients

- 4 chicken thighs
- 2 cups mixed vegetables (carrots, broccoli, bell peppers)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Pat the chicken thighs dry and season with garlic powder, onion powder, salt, and pepper.
- In a bowl, toss mixed vegetables with olive oil, salt, and pepper.
- Place chicken thighs in the air fryer basket.
- Add the mixed vegetables around the chicken.
- Cook for 25-30 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F (75°C).
- Let rest for 5 minutes before serving.
Notes
- You can substitute chicken thighs with chicken breasts or tofu for a vegetarian option.
- Feel free to use any vegetables you have on hand.
- Ensure the air fryer is not overcrowded for even cooking.
