Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat the softened butter and sugars until creamy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, combine flour, cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoon-sized balls of dough onto a baking sheet, leaving space between each.
- Bake for 8-10 minutes or until golden brown.
- Let the cookies cool completely.
- In a small bowl, mix the powdered sugar and milk until smooth.
- Spread a layer of apple pie filling on the flat side of one cookie, then top with another cookie to form a sandwich.
