- 1/2 cup unsalted butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine apricots, 1/2 cup sugar, lemon juice, and vanilla. Mix gently.
- Spread the apricot mixture in a baking dish.
- In another bowl, mix flour, baking powder, salt, and remaining sugar.
- Add milk and melted butter to the dry ingredients. Mix until just combined.
- Pour the batter over the apricots in the baking dish.
- Bake for 35-40 minutes until golden brown and bubbly.
- Let it cool slightly before serving. Enjoy warm.

- Use canned or frozen apricots if fresh ones are not available.
