Ingredients

  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 2 tablespoons brown sugar
  • 5 cups all-purpose flour
  • 1 tablespoon salt
  • 1 cup asiago cheese, shredded
  • 1/2 cup baking soda
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt (for topping)

Instructions

  1. In a bowl, combine warm water, yeast, and brown sugar. Let it sit for 5 minutes until bubbly.
  2. Add flour and salt. Mix until a dough forms.
  3. Knead the dough for about 5 minutes on a floured surface.
  4. Place the dough in a greased bowl. Cover and let it rise for 1 hour, or until doubled in size.
  5. Preheat your oven to 450°F.
  6. Dissolve baking soda in 4 cups of water in a large pot and bring to a boil.
  7. Divide the dough into 8 pieces. Roll each piece into a long rope and twist into a pretzel shape.
  8. Boil each pretzel in the baking soda water for 30 seconds, then remove and place on a baking sheet.
  9. Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  10. Bake for 12-15 minutes until golden brown. Enjoy warm.
