Ingredients

- 2 cups warm water (110°F to 115°F)
- 1 packet active dry yeast (2 1/4 teaspoons)
- 2 tablespoons brown sugar
- 5 cups all-purpose flour
- 1 tablespoon salt
- 1 cup asiago cheese, shredded
- 1/2 cup baking soda
- 1 egg, beaten (for egg wash)
- Coarse sea salt (for topping)
Instructions
- In a bowl, combine warm water, yeast, and brown sugar. Let it sit for 5 minutes until bubbly.
- Add flour and salt. Mix until a dough forms.
- Knead the dough for about 5 minutes on a floured surface.
- Place the dough in a greased bowl. Cover and let it rise for 1 hour, or until doubled in size.
- Preheat your oven to 450°F.
- Dissolve baking soda in 4 cups of water in a large pot and bring to a boil.
- Divide the dough into 8 pieces. Roll each piece into a long rope and twist into a pretzel shape.
- Boil each pretzel in the baking soda water for 30 seconds, then remove and place on a baking sheet.
- Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
- Bake for 12-15 minutes until golden brown. Enjoy warm.
Notes
- For a gluten-free option, use gluten-free flour.
- Substitute asiago cheese with cheddar or mozzarella.
- Store leftovers in an airtight container for up to 3 days.
