A refreshing Asian cucumber salad perfect for warm days.

			- 2 large cucumbers
 - 1 tablespoon salt
 - 1/4 cup rice vinegar
 - 2 tablespoons sugar
 - 2 tablespoons sesame oil
 - 1 tablespoon soy sauce
 - 2 green onions, chopped
 - 1 tablespoon sesame seeds
 
Instructions
- Wash the cucumbers and slice them thinly.
 - Place the cucumber slices in a bowl and sprinkle with salt. Let them sit for 15 minutes.
 - In another bowl, combine rice vinegar, sugar, sesame oil, and soy sauce. Stir until the sugar dissolves.
 - Rinse the cucumbers under cold water and drain well.
 - Add the cucumbers to the dressing and mix well.
 - Garnish with green onions and sesame seeds before serving.
 
Notes
- For a gluten-free option, use tamari instead of soy sauce.
 - Feel free to add other vegetables like carrots or bell peppers.
 - Adjust the sugar based on your taste preference.
