Ingredients

- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 1 cup tofu, cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon cornstarch (optional for thickening)
- Cooked rice for serving
Instructions
- Heat sesame oil in a pan over medium heat.
- Add garlic and ginger. Sauté until fragrant.
- Add mixed vegetables and stir-fry for 5 minutes.
- Add cubed tofu and soy sauce. Stir well to combine.
- If using, mix cornstarch with a little water and add to the pan. Stir until thickened.
- Serve over cooked rice.
Notes
- Substitute tofu with chicken or shrimp if preferred.
- Use any vegetables you have on hand.
- Adjust soy sauce to taste for less sodium.
