Ingredients

  • 200g rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, bell peppers, broccoli)
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Optional: cooked chicken or tofu for protein

Instructions

  1. Soak the rice noodles in warm water for 10 minutes until soft.
  2. In a pan, heat sesame oil over medium heat.
  3. Add garlic and ginger, and stir for 1 minute.
  4. Add mixed vegetables and cook until tender.
  5. Drain the noodles and add them to the pan.
  6. Pour in soy sauce and mix well.
  7. If using, add cooked chicken or tofu and stir until heated through.
  8. Season with salt and pepper to taste.
  9. Garnish with green onions before serving.

Notes

  • You can substitute rice noodles with egg noodles or whole grain noodles.
  • Add any seasonal vegetables you like.
  • For a gluten-free option, use tamari instead of soy sauce.
