Ingredients

- 200g rice noodles
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (carrots, bell peppers, broccoli)
- 2 green onions, chopped
- 1 clove garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Optional: cooked chicken or tofu for protein
Instructions
- Soak the rice noodles in warm water for 10 minutes until soft.
- In a pan, heat sesame oil over medium heat.
- Add garlic and ginger, and stir for 1 minute.
- Add mixed vegetables and cook until tender.
- Drain the noodles and add them to the pan.
- Pour in soy sauce and mix well.
- If using, add cooked chicken or tofu and stir until heated through.
- Season with salt and pepper to taste.
- Garnish with green onions before serving.
Notes
- You can substitute rice noodles with egg noodles or whole grain noodles.
- Add any seasonal vegetables you like.
- For a gluten-free option, use tamari instead of soy sauce.
