Description
A healthy asparagus soup that is comforting and easy to make.
Ingredients

- 1 pound fresh asparagus, trimmed and cut into pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup unsweetened almond milk
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic. Sauté until softened, about 5 minutes.
- Add asparagus and broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes, until asparagus is tender.
- Blend the soup until smooth using an immersion blender or regular blender.
- Stir in almond milk and season with salt and pepper.
- Heat through and serve warm.
Notes
- You can substitute vegetable broth with chicken broth if preferred.
- Use coconut milk for a creamier texture.
- For a thicker soup, add a peeled potato during cooking.
- Store leftovers in the fridge for up to 3 days.
