Ingredients

  • 1 pound fresh asparagus, trimmed and cut into pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Sauté until softened, about 5 minutes.
  3. Add asparagus and broth. Bring to a boil.
  4. Reduce heat and simmer for 15 minutes, until asparagus is tender.
  5. Blend the soup until smooth using an immersion blender or regular blender.
  6. Stir in almond milk and season with salt and pepper.
  7. Heat through and serve warm.
