Ingredients

- 1 pound fresh asparagus, trimmed and cut into pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream or coconut milk for a dairy-free option
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic. Sauté until softened.
- Add asparagus pieces and cook for about 5 minutes.
- Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes until asparagus is tender.
- Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender in batches.
- Stir in the cream or coconut milk and heat through.
- Season with salt and pepper to taste.
- Serve warm and enjoy.
Notes
- For a richer flavor, add a pinch of nutmeg.
- Substitute green beans or peas for asparagus if preferred.
- Store leftovers in the refrigerator for up to 3 days.
