Ingredients

  • 1 pound fresh asparagus, trimmed and cut into pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream or coconut milk for a dairy-free option
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic. Sauté until softened.
  3. Add asparagus pieces and cook for about 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes until asparagus is tender.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer to a blender in batches.
  6. Stir in the cream or coconut milk and heat through.
  7. Season with salt and pepper to taste.
  8. Serve warm and enjoy.
