- 2 ripe bananas
- 2 cups almond flour
- 1/4 cup honey or maple syrup
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the ripe bananas until smooth.
- Add honey or maple syrup and melted coconut oil to the bowl. Mix well.
- Crack in the eggs and add vanilla extract. Stir to combine.
- In another bowl, mix together almond flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool for a few minutes, then slice and enjoy.
Notes
- You can substitute honey with agave syrup for a vegan option.
- Add nuts or chocolate chips for extra flavor.
- Store leftovers in an airtight container at room temperature for up to three days.
