Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk (or almond milk for dairy-free)
  • 1 egg
  • 2 tablespoons melted butter (or coconut oil)

Instructions

  1. In a bowl, mash the bananas with a fork until smooth.
  2. Add flour, sugar, baking powder, baking soda, and salt. Mix well.
  3. In another bowl, whisk together milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined.
  5. Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. Repeat until all batter is used. Serve warm.
