Delicious beef mince enchilada roll-ups that are easy to prepare and perfect for sharing.


Ingredients

  • 1 lb ground beef
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add black beans, corn, cumin, garlic powder, salt, and pepper to the beef. Stir to combine.
  4. Spread a layer of enchilada sauce on the bottom of a baking dish.
  5. Take a tortilla and fill it with the beef mixture. Roll it up tightly and place it seam side down in the dish.
  6. Repeat with remaining tortillas and beef mixture.
  7. Top the roll-ups with remaining enchilada sauce and sprinkle cheese on top.
  8. Bake in the oven for 20-25 minutes until cheese is melted and bubbly.

  • You can use ground turkey or chicken as a substitute for beef.
