Delicious beef mince enchilada roll-ups that are easy to prepare and perfect for sharing.
Ingredients

- 1 lb ground beef
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add black beans, corn, cumin, garlic powder, salt, and pepper to the beef. Stir to combine.
- Spread a layer of enchilada sauce on the bottom of a baking dish.
- Take a tortilla and fill it with the beef mixture. Roll it up tightly and place it seam side down in the dish.
- Repeat with remaining tortillas and beef mixture.
- Top the roll-ups with remaining enchilada sauce and sprinkle cheese on top.
- Bake in the oven for 20-25 minutes until cheese is melted and bubbly.
Notes
- You can use ground turkey or chicken as a substitute for beef.
- For a vegetarian option, replace beef with sautéed vegetables or lentils.
- Feel free to add chopped onions or bell peppers to the beef mixture for extra flavor.
- Use whole wheat tortillas for a healthier option.
