- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef chunks on all sides, about 5 minutes.
- Add onion and garlic, sauté until soft.
- Stir in tomato paste, thyme, salt, and pepper.
- Add beef broth, carrots, potatoes, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 1.5 to 2 hours, until beef is tender.
- Remove bay leaf before serving.
Notes
- You can use chicken or vegetable broth for a lighter option.
- Substitute sweet potatoes for regular potatoes for a different flavor.
