Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (10 ounces) enchilada sauce
  • 8 corn tortillas
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, brown the ground beef over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is soft.
  3. Stir in the diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper.
  4. Simmer the mixture for about 10 minutes.
  5. Warm the tortillas in a separate pan until soft.
  6. Fill each tortilla with the beef mixture and roll them up.
  7. Place the rolled tortillas seam side down in the skillet.
  8. Top with shredded cheese.
  9. Cover and cook on low heat until the cheese melts.
  10. Serve warm and enjoy.
