Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes
- 1 can (10 ounces) enchilada sauce
- 8 corn tortillas
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large skillet, brown the ground beef over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is soft.
- Stir in the diced tomatoes, enchilada sauce, cumin, chili powder, salt, and pepper.
- Simmer the mixture for about 10 minutes.
- Warm the tortillas in a separate pan until soft.
- Fill each tortilla with the beef mixture and roll them up.
- Place the rolled tortillas seam side down in the skillet.
- Top with shredded cheese.
- Cover and cook on low heat until the cheese melts.
- Serve warm and enjoy.

- You can substitute ground turkey for a leaner option.
- Use black beans or lentils for a vegetarian option.
