Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the cream cheese until smooth.
- Add granulated sugar and vanilla extract, mixing until well combined.
- Add eggs one at a time, mixing on low speed.
- Fold in the pureed strawberries gently.
- Pour the cheesecake batter over the crust.
- Bake for 55-60 minutes or until the center is set.
- Let it cool, then refrigerate for at least 4 hours.
- Top with sliced strawberries and dust with powdered sugar before serving.
