A comforting and easy-to-make fried rice recipe that tastes better than takeout.

- 4 cups cooked rice
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large pan over medium heat.
- Add mixed vegetables and stir-fry for 3-4 minutes.
- Pushed the vegetables to one side of the pan and pour in the beaten eggs. Scramble until cooked.
- Add the cooked rice to the pan and mix well with the vegetables and eggs.
- Pour soy sauce over the rice and stir to combine.
- Season with salt and pepper.
- Garnish with chopped green onion before serving.
Notes
- You can use leftover rice for better texture.
- Substitute vegetables based on your preference.
- For a vegetarian option, omit the eggs.
