Ingredients

  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan over medium heat.
  2. Add mixed vegetables and stir-fry for 3-4 minutes.
  3. Pushed the vegetables to one side of the pan and pour in the beaten eggs. Scramble until cooked.
  4. Add the cooked rice to the pan and mix well with the vegetables and eggs.
  5. Pour soy sauce over the rice and stir to combine.
  6. Season with salt and pepper.
  7. Garnish with chopped green onion before serving.
