Instructions

  1. Preheat your oven to 375°F.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onion and garlic, sauté until softened.
  4. Add chicken thighs and brown on both sides.
  5. Transfer the chicken to a baking dish.
  6. In the same skillet, add mixed vegetables and cook for a few minutes.
  7. Add rice, chicken broth, salt, and pepper; stir to combine.
  8. Pour the vegetable and rice mixture over the chicken.
  9. Cover the dish with foil and bake for 45 minutes.
  10. Remove the foil and bake for an additional 15 minutes.
