Ingredients

- 2 lbs of chicken thighs
- 4 cups of mixed vegetables (carrots, peas, corn)
- 1 onion, chopped
- 4 cloves of garlic, minced
- 1 cup of chicken broth
- 2 cups of rice
- 1 tsp of salt
- 1/2 tsp of pepper
- 1 tbsp of olive oil
Instructions
- Preheat your oven to 375°F.
- Heat olive oil in a large skillet over medium heat.
- Add onion and garlic, sauté until softened.
- Add chicken thighs and brown on both sides.
- Transfer the chicken to a baking dish.
- In the same skillet, add mixed vegetables and cook for a few minutes.
- Add rice, chicken broth, salt, and pepper; stir to combine.
- Pour the vegetable and rice mixture over the chicken.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes.
Notes
- Substitute chicken with tofu for a vegetarian option.
- You can use frozen vegetables for convenience.
