Description

Ingredients

  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 jar (24 oz) Morello cherries, drained
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Chocolate shavings for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla. Mix until smooth.
  4. Slowly stir in boiling water until well combined.
  5. Pour batter evenly into prepared pans.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Whip the cream with powdered sugar until stiff peaks form.
  9. Once cakes are cool, slice each cake in half horizontally.
  10. Place one layer of cake on a serving plate. Spread with cherries and whipped cream.
  11. Add the second layer and repeat. Top with the last layer and cover the cake with remaining whipped cream.
  12. Garnish with chocolate shavings. Chill before serving.

  • For a gluten-free option, use a gluten-free flour blend.
  • You can substitute almond milk for a dairy-free version.
  • Use fresh cherries if preferred.
  • For less sweetness, reduce the sugar in the whipped cream.
