Description
A classic dessert with layers of chocolate cake, cherries, and whipped cream.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) Morello cherries, drained
- 2 cups heavy whipping cream
- 1/4 cup powdered sugar
- Chocolate shavings for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla. Mix until smooth.
- Slowly stir in boiling water until well combined.
- Pour batter evenly into prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Whip the cream with powdered sugar until stiff peaks form.
- Once cakes are cool, slice each cake in half horizontally.
- Place one layer of cake on a serving plate. Spread with cherries and whipped cream.
- Add the second layer and repeat. Top with the last layer and cover the cake with remaining whipped cream.
- Garnish with chocolate shavings. Chill before serving.
Notes
- For a gluten-free option, use a gluten-free flour blend.
- You can substitute almond milk for a dairy-free version.
- Use fresh cherries if preferred.
- For less sweetness, reduce the sugar in the whipped cream.
