Description
A comforting and easy bog mac pasta salad perfect for gatherings or a simple meal.
Ingredients

			- 8 ounces macaroni pasta
 - 1 cup cherry tomatoes, halved
 - 1 cup cucumber, diced
 - 1 cup bell pepper, diced
 - 1/2 cup red onion, diced
 - 1 cup mayonnaise
 - 2 tablespoons apple cider vinegar
 - 1 tablespoon Dijon mustard
 - Salt and pepper to taste
 
Instructions
- Cook the macaroni pasta according to package instructions. Drain and rinse with cold water.
 - In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
 - In a separate bowl, mix together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
 - Pour the dressing over the pasta and vegetable mixture. Stir gently to combine.
 - Cover and refrigerate for at least 30 minutes before serving.
 
Notes
- You can substitute any pasta shape you prefer.
 - For a lighter option, use Greek yogurt instead of mayonnaise.
 - Add cooked chicken or tuna for extra protein.
