Ingredients

  • 1 package (5.2 oz) boursin cheese
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add spinach and cherry tomatoes. Cook until spinach wilts and tomatoes are tender.
  4. Reduce heat and stir in boursin cheese until melted and creamy.
  5. Add cooked pasta to the skillet. Toss until well coated.
  6. Season with salt and pepper to taste.
  7. Serve warm with grated Parmesan cheese if desired.
