- 2 cups broccoli florets
- 1 cup cooked quinoa
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine broccoli, cooked quinoa, cherry tomatoes, and olive oil.
- Add garlic powder, salt, and pepper to taste. Mix well.
- Spread the mixture on a baking sheet.
- Bake for 20 minutes or until the broccoli is tender.
- Sprinkle with Parmesan cheese before serving.
Notes
- You can substitute quinoa with brown rice or couscous.
- If you are lactose intolerant, use nutritional yeast instead of Parmesan.
- Add cooked chicken or chickpeas for extra protein.
