Ingredients

- 1 medium butternut squash
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 1/2 cup vegetable broth (or chicken broth)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half and scoop out the seeds.
- Drizzle olive oil over the cut sides and sprinkle with salt and pepper.
- Place the squash halves cut side down on a baking sheet.
- Bake for 40-50 minutes until tender.
- Let it cool slightly, then scoop the flesh into a bowl.
- Add vegetable broth and mash or blend until smooth.
- Taste and adjust seasoning as needed.
Notes
- For a sweeter taste, add a pinch of cinnamon or nutmeg.
- Use butter instead of olive oil for a richer flavor.
- This puree can be frozen for later use.
