- 2 large carrots, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 teaspoon thyme
- Salt to taste
- Pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrots and cook for another 5 minutes.
- Add chopped cabbage, diced tomatoes, and broth.
- Season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Taste and adjust seasoning if needed.
- Serve warm and enjoy.

- Substitute vegetable broth with chicken broth for a non-vegetarian option.
- Add beans for extra protein.
- Use any other vegetables you have on hand.
