Description
A hearty and easy camping crockpot meal that warms you up after a long day outdoors.
Ingredients

- 2 lbs of chicken thighs
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 cup of corn
- 1 can of diced tomatoes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- 1 tsp of salt
- 1/2 tsp of black pepper
- 4 cups of chicken broth
Instructions
- Place the chicken thighs at the bottom of the crockpot.
- Add the carrots, potatoes, corn, onion, and garlic on top of the chicken.
- Sprinkle thyme, salt, and pepper over the vegetables.
- Pour in the diced tomatoes and chicken broth.
- Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken before serving and stir everything together.
Notes
- For a vegetarian option, replace chicken with chickpeas.
- You can use fresh or frozen vegetables.
- Adjust seasoning to suit your taste.
