Ingredients

  • 2 lbs of chicken thighs
  • 1 cup of diced carrots
  • 1 cup of diced potatoes
  • 1 cup of corn
  • 1 can of diced tomatoes
  • 1 onion, chopped

  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 4 cups of chicken broth

Instructions

  1. Place the chicken thighs at the bottom of the crockpot.
  2. Add the carrots, potatoes, corn, onion, and garlic on top of the chicken.
  3. Sprinkle thyme, salt, and pepper over the vegetables.
  4. Pour in the diced tomatoes and chicken broth.
  5. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken before serving and stir everything together.
