Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the grated carrots, sugar, and oil.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- If using, fold in the walnuts and raisins.
- Pour the batter into a greased baking pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
