Instructions
- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine the diced potatoes, sliced sausage, and chopped onion.
- Drizzle with olive oil and season with salt and pepper.
- Toss everything together until well-coated.
- Bake for 30 minutes, stirring halfway through.
- Remove from the oven and sprinkle cheese on top.
- Return to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
