Ingredients

			- 2 cups chopped mixed vegetables (carrots, celery, and bell peppers)
 - 1 medium onion, diced
 - 3 cups vegetable broth
 - 1 cup milk
 - 2 cups shredded cheese (cheddar or your choice)
 - 2 tablespoons butter
 - 1 teaspoon garlic powder
 - Salt and pepper to taste
 
Instructions
- In a large pot, melt the butter over medium heat.
 - Add the onion and sauté until translucent, about 5 minutes.
 - Add the mixed vegetables and cook for another 5 minutes.
 - Pour in the vegetable broth and bring to a boil.
 - Reduce heat and let simmer for 10 minutes.
 - Stir in the milk and cheese until melted and smooth.
 - Add garlic powder, salt, and pepper to taste.
 - Serve warm and enjoy your comforting soup.

- You can substitute any vegetables you have on hand.
 - For a lighter version, use low-fat cheese and milk.
 - To make it vegan, use plant-based cheese and milk.
