Ingredients

  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Optional: 1 cup noodles or rice

Instructions

  1. Place the chicken carcass in a large pot.
  2. Add water and bring to a boil.
  3. Add onion, carrots, celery, garlic, salt, pepper, bay leaves, and thyme.
  4. Reduce heat and simmer for 1-2 hours.
  5. Remove the carcass and strain the broth.
  6. If using, add noodles or rice and cook until tender.
  7. Serve warm and enjoy.
