Ingredients

- 1 chicken carcass
- 8 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 bay leaves
- 1 teaspoon dried thyme
- Optional: 1 cup noodles or rice
Instructions
- Place the chicken carcass in a large pot.
- Add water and bring to a boil.
- Add onion, carrots, celery, garlic, salt, pepper, bay leaves, and thyme.
- Reduce heat and simmer for 1-2 hours.
- Remove the carcass and strain the broth.
- If using, add noodles or rice and cook until tender.
- Serve warm and enjoy.
Notes
- You can use leftover vegetables for added flavor.
- Feel free to add herbs you like.
- Store leftovers in the fridge for up to 3 days.
