Description

A comforting chicken chimichanga recipe that is easy to prepare.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup refried beans
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 8 large flour tortillas
  • Vegetable oil for frying

Instructions

  1. In a bowl, mix the shredded chicken, refried beans, cheese, sour cream, cumin, and garlic powder.
  2. Warm the tortillas in the microwave for about 30 seconds to make them pliable.
  3. Place about 1/4 cup of the chicken mixture in the center of each tortilla.
  4. Fold the sides of the tortilla over the filling and roll it up tightly.
  5. Heat oil in a large skillet over medium heat.
  6. Carefully place the chimichangas seam side down in the hot oil.
  7. Fry for about 3-4 minutes until golden brown, then flip and fry the other side.
  8. Remove from oil and place on paper towels to drain excess oil.
  9. Serve warm with your choice of toppings.

Notes

  • You can substitute shredded beef or beans for chicken.
  • Use low-fat cheese or Greek yogurt for a healthier option.
  • For a vegetarian version, omit the chicken.
