Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub the olive oil over the chicken and season with salt, pepper, garlic powder, and onion powder.
- Place the chicken in a roasting pan, breast side up.
- Pour the chicken broth around the chicken in the pan.
- Add the carrots, celery, and onions around the chicken.
- Sprinkle the thyme over the vegetables.
- Cover the pan with aluminum foil.
- Bake for 1 hour, then remove the foil and bake for an additional 30 minutes, or until the chicken is golden brown and the juices run clear.
- Let the chicken rest for 10 minutes before carving.
