Easy chicken egg rolls recipe for a comforting meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cabbage, finely chopped
  • 1/2 cup carrots, grated
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 package egg roll wrappers
  • Oil for frying

Instructions

  1. In a large bowl, combine the chicken, cabbage, carrots, green onions, garlic, ginger, and soy sauce.
  2. Place an egg roll wrapper on a clean surface, with a corner facing you.
  3. Put 2 tablespoons of the chicken mixture in the center of the wrapper.
  4. Fold the corner over the filling, then fold in the sides and roll tightly.
  5. Repeat with the remaining wrappers and filling.
  6. Heat oil in a frying pan over medium heat.
  7. Fry the egg rolls until golden brown, about 3-4 minutes on each side.
  8. Remove and drain on paper towels.
  9. Serve warm with dipping sauce of your choice.

Notes

  • You can substitute chicken with tofu for a vegetarian option.
  • Use pre-shredded coleslaw mix for convenience.
