Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cabbage, finely chopped
- 1/2 cup carrots, grated
- 2 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon soy sauce
- 1 package egg roll wrappers
- Oil for frying
Instructions
- In a large bowl, combine the chicken, cabbage, carrots, green onions, garlic, ginger, and soy sauce.
- Place an egg roll wrapper on a clean surface, with a corner facing you.
- Put 2 tablespoons of the chicken mixture in the center of the wrapper.
- Fold the corner over the filling, then fold in the sides and roll tightly.
- Repeat with the remaining wrappers and filling.
- Heat oil in a frying pan over medium heat.
- Fry the egg rolls until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve warm with dipping sauce of your choice.
Notes
- You can substitute chicken with tofu for a vegetarian option.
- Use pre-shredded coleslaw mix for convenience.
- Air frying is a healthier alternative to frying.
