Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix cooked chicken, diced onions, cumin, salt, and pepper.
  3. Spread some enchilada sauce on the bottom of a baking dish.
  4. Take a tortilla, fill it with the chicken mixture, and roll it up.
  5. Place the rolled tortilla seam-side down in the baking dish.
  6. Repeat until all tortillas are filled.
  7. Pour remaining enchilada sauce over the top.
  8. Sprinkle shredded cheese on top.
  9. Bake for 20-25 minutes until cheese is melted and bubbly.
  10. Serve with sour cream on the side.
