Ingredients

  • 1 cup cheese, shredded (cheddar or mozzarella)
  • 4 large flour tortillas
  • 1 cup bell peppers, sliced
  • 1/2 cup onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add sliced onions and bell peppers, sauté until soft.
  3. Add shredded chicken, salt, and pepper. Stir to combine and heat through.
  4. Place one tortilla in the skillet, add a portion of chicken mixture, and sprinkle with cheese.
  5. Top with another tortilla and cook until golden brown, then flip and cook the other side.
  6. Repeat with remaining tortillas and filling.
  7. Slice into wedges and serve warm.
