Ingredients

- 2 cups cooked chicken, shredded
- 1 cup cheese, shredded (cheddar or mozzarella)
- 4 large flour tortillas
- 1 cup bell peppers, sliced
- 1/2 cup onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, sauté until soft.
- Add shredded chicken, salt, and pepper. Stir to combine and heat through.
- Place one tortilla in the skillet, add a portion of chicken mixture, and sprinkle with cheese.
- Top with another tortilla and cook until golden brown, then flip and cook the other side.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm.
Notes
- You can use leftover rotisserie chicken for convenience.
- Use corn tortillas for a gluten-free option.
- Add black beans or corn for extra nutrition.
