Ingredients

- 2 cups of long-grain rice
- 4 cups of chicken broth
- 1 pound of chicken breast, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of mixed vegetables (carrots, peas)
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic. Sauté until soft.
- Add diced chicken and cook until browned.
- Stir in rice and cook for 2 minutes.
- Pour in chicken broth and soy sauce. Bring to a boil.
- Add mixed vegetables. Reduce heat, cover, and simmer for 20 minutes.
- Fluff rice with a fork and season with salt and pepper.
