Ingredients

- 1 whole chicken (about 4 pounds)
- 8 cups of water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 bay leaves
- 1 teaspoon of dried thyme
- 1 cup of noodles (optional)
Instructions
- Place the whole chicken in a large pot.
- Add water, carrots, celery, onion, garlic, salt, pepper, bay leaves, and thyme.
- Bring to a boil over medium-high heat.
- Reduce heat and let simmer for about 1 hour, or until chicken is cooked through.
- Remove the chicken and let it cool slightly.
- Shred the chicken into bite-sized pieces, discarding the bones and skin.
- If using noodles, add them to the pot and cook according to package instructions.
- Return shredded chicken to the pot and stir well.
- Adjust seasoning if necessary and serve warm.
Notes
- Substitute chicken with turkey for a different flavor.
- Use vegetable broth for a vegetarian option.
- Add spinach or kale for extra nutrition.
- Store leftovers in the refrigerator for up to 3 days.
