Ingredients

  • 2 lbs chicken pieces
  • 4 cups chicken broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken and set aside. Add onion and garlic to the pot and sauté until soft.
  4. Add carrots and potatoes to the pot, stirring for a few minutes.
  5. Return chicken to the pot, then pour in the chicken broth.
  6. Add thyme, rosemary, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  8. Check that chicken is cooked through and vegetables are tender.
  9. Serve warm and enjoy your meal.

Notes

  • You can substitute chicken thighs for chicken breasts for more flavor.
