Ingredients

- 2 lbs chicken pieces
- 4 cups chicken broth
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt to taste
- Pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken pieces and brown on all sides.
- Remove chicken and set aside. Add onion and garlic to the pot and sauté until soft.
- Add carrots and potatoes to the pot, stirring for a few minutes.
- Return chicken to the pot, then pour in the chicken broth.
- Add thyme, rosemary, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Check that chicken is cooked through and vegetables are tender.
- Serve warm and enjoy your meal.
Notes
- You can substitute chicken thighs for chicken breasts for more flavor.
- Add peas or green beans for extra vegetables.
- Use low-sodium broth if watching salt intake.
