A comforting dish of bell peppers stuffed with flavorful chicken and rice.


Ingredients

  • 4 large bell peppers
  • 1 pound ground chicken
  • 1 cup cooked rice
  • 1 can diced tomatoes (15 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix ground chicken, cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Stuff each bell pepper with the chicken mixture.
  5. Place the stuffed peppers upright in a baking dish.
  6. If desired, sprinkle cheese on top of each pepper.
  7. Cover the dish with aluminum foil.
  8. Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes.
  9. Let cool for a few minutes before serving.
