			- 2 boneless, skinless chicken breasts
 - 2 medium sweet potatoes, peeled and diced
 - 2 tablespoons olive oil
 - 1 teaspoon garlic powder
 - 1 teaspoon paprika
 - Salt and pepper to taste
 - 1 cup chicken broth
 - Fresh parsley for garnish
 
Instructions
- Preheat your oven to 400°F (200°C).
 - In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper.
 - Place the sweet potatoes in a baking dish.
 - Season the chicken breasts with salt and pepper, then place them on top of the sweet potatoes.
 - Pour the chicken broth into the baking dish.
 - Bake for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
 - Let it rest for a few minutes before serving. Garnish with fresh parsley.
 
Notes
- You can substitute chicken thighs for chicken breasts if you prefer.
 - Try using butternut squash instead of sweet potatoes for a different flavor.
 - Adjust the seasoning to your taste preferences.
 - This dish can be made in a slow cooker; just set it on low for 6-8 hours.
