- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup shredded cheese
- 1 cup cornmeal
- 1 cup milk
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon cumin
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine chicken, black beans, corn, and salsa.
- Spread the mixture evenly in a greased baking dish.
- In another bowl, whisk together cornmeal, milk, eggs, baking powder, and cumin.
- Pour the cornmeal mixture over the chicken layer.
- Sprinkle cheese on top.
- Bake for 30-35 minutes until the top is golden.
- Let it cool for a few minutes before serving.
Notes
- You can substitute ground turkey for chicken.
- Use low-fat cheese for a lighter option.
