Ingredients

- 2 cups of diced chicken breast
- 2 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 cup of mixed vegetables (carrots, bell peppers, peas)
- 2 cloves of garlic, minced
- 1 teaspoon of ginger, minced
- 1/2 cup of chicken broth
- Salt and pepper to taste
Instructions
- In a bowl, combine chicken, soy sauce, and cornstarch. Let it marinate for 15 minutes.
- Heat vegetable oil in a pan over medium heat.
- Add the marinated chicken and cook until browned.
- Add garlic and ginger, and stir for 1 minute.
- Add mixed vegetables and cook until just tender.
- Pour in chicken broth, and let simmer for 5 minutes.
- Season with salt and pepper to taste.
- Serve warm over rice or noodles.
