Ingredients

- 2 cups vegetable broth
- 1 cup mixed vegetables (carrots, broccoli, bell peppers)
- 1 cup tofu, cubed
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Heat the vegetable broth in a pot over medium heat.
- Add the mixed vegetables and cook for 5 minutes.
- Add tofu, soy sauce, ginger, and garlic.
- Simmer for another 10 minutes.
- Season with salt and pepper to taste.
- Serve warm.
