Ingredients

- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 cup mushrooms, sliced
- 2 cups vegetable broth
- 1 cup water
- 2 cups bok choy, chopped
- 1 tablespoon soy sauce
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the onion and garlic. Sauté until the onion is translucent.
- Add the carrots and bell pepper. Cook for 5 minutes.
- Add the mushrooms, vegetable broth, and water. Bring to a boil.
- Reduce heat and add the bok choy, soy sauce, and ginger. Simmer for 10 minutes.
- Season with salt and pepper to taste. Serve hot.
