Ingredients

- 4 cups vegetable broth
- 1 cup carrots, sliced
- 1 cup celery, diced
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 1 cup snow peas
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the garlic and ginger, and sauté for 2 minutes.
- Add the carrots and celery. Cook for 5 minutes until softened.
- Add the mushrooms, bok choy, and snow peas. Stir well.
- Pour in the soy sauce and season with salt and pepper.
- Simmer for 10 minutes until all vegetables are tender.
- Serve hot and enjoy your cozy soup.

- You can substitute any vegetables you like or have on hand.
- For a heartier soup, add tofu or cooked chicken.
- Use low-sodium broth for a healthier option.
