Ingredients

- 4 cups vegetable broth
- 2 cups mixed vegetables (carrots, bell peppers, broccoli)
- 1 cup mushrooms, sliced
- 1 cup bok choy, chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add garlic and ginger, sauté for 2 minutes.
- Add mixed vegetables and mushrooms, cook for 5 minutes.
- Stir in bok choy and soy sauce, simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve warm and enjoy.
