Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the minced garlic and grated ginger, cooking for 1-2 minutes.
- Stir in the mixed Chinese vegetables and tofu.
- Pour in the soy sauce and season with salt and pepper.
- Let the soup simmer for 10-15 minutes until the vegetables are tender.
- Garnish with chopped green onions before serving.
