A rich and decadent chocolate cake with blackberry frosting, perfect for Halloween celebrations.

- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup fresh blackberries
- 1 cup butter, softened
- 4 cups powdered sugar
- 2 tablespoons milk (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes.
- Stir in boiling water carefully. The batter will be thin.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in pans for 10 minutes, then remove from pans to cool completely on wire racks.
- For frosting, mash blackberries and mix with softened butter until smooth.
- Add powdered sugar and milk. Beat until creamy.
- Spread frosting on cooled cakes and stack them.
- Decorate with extra blackberries if desired.
Notes
- For gluten-free, use a gluten-free flour blend.
- Replace eggs with applesauce for a vegan option.
- You can use frozen blackberries if fresh are not available.
