  • 1 lb chicken breast, diced
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced

  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and coconut milk. Add 1 cup of water.
  3. Bring to a boil, then reduce to low heat and cover. Cook for 15-20 minutes until rice is tender.
  4. In a skillet, heat vegetable oil over medium heat.
