- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 lb chicken breast, diced
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon soy sauce
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and coconut milk. Add 1 cup of water.
- Bring to a boil, then reduce to low heat and cover. Cook for 15-20 minutes until rice is tender.
- In a skillet, heat vegetable oil over medium heat.
- Add garlic and ginger, sauté for 1 minute until fragrant.
- Add diced chicken to the skillet. Cook until chicken is browned and cooked through, about 7-10 minutes.
- Stir in soy sauce, salt, and pepper. Mix well.
- Serve the chicken over the coconut rice and garnish with chopped cilantro.

- You can substitute chicken with tofu for a vegetarian option.
- Use brown rice for a healthier choice; just adjust the cooking time.
