- 2 lbs beef stew meat, cut into cubes
- 4 cups beef broth
- 4 medium carrots, sliced
- 3 medium potatoes, diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons flour (optional for thickening)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sauté until soft.
- Add the beef stew meat and brown on all sides.
- Stir in the flour if using, and cook for another minute.
- Add the beef broth, carrots, potatoes, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for about 1.5 to 2 hours, or until beef is tender.
- Remove bay leaf before serving.
Notes
- You can substitute chicken or vegetable broth for a different flavor.
- Use sweet potatoes instead of regular potatoes for a healthier option.
- Add peas or green beans for extra vegetables.
- For a gluten-free version, skip the flour or use a gluten-free thickening agent.
