  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sauté until soft.
  3. Add the beef stew meat and brown on all sides.
  4. Stir in the flour if using, and cook for another minute.
  5. Add the beef broth, carrots, potatoes, salt, pepper, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat to low and cover.
  7. Simmer for about 1.5 to 2 hours, or until beef is tender.
  8. Remove bay leaf before serving.
