Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  3. In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl, beat eggs and sugar until light.
  5. Add oil and vanilla to the egg mixture and mix well.
  6. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  7. Fold in grated carrots and walnuts if using.
  8. Spread the batter evenly in the prepared pan.
  9. Bake for 13-15 minutes or until a toothpick comes out clean.
  10. While baking, prepare a clean kitchen towel and dust it with powdered sugar.
  11. When the cake is done, immediately turn it out onto the towel.
  12. Carefully peel off the parchment paper and roll the cake in the towel from the short side.
  13. Let it cool completely.
  14. While cooling, make the frosting by beating cream cheese and butter until smooth.
  15. Add powdered sugar and vanilla, mix until creamy.
  16. Once the cake is cool, unroll it and spread the cream cheese frosting evenly.
  17. Roll the cake back up without the towel and wrap it in plastic wrap.
  18. Chill in the refrigerator for at least 1 hour before slicing.
