A delightful carrot cake roll filled with cream cheese frosting.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts (optional)
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 15×10 inch jelly roll pan and line it with parchment paper.
- In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, beat eggs and sugar until light.
- Add oil and vanilla to the egg mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Fold in grated carrots and walnuts if using.
- Spread the batter evenly in the prepared pan.
- Bake for 13-15 minutes or until a toothpick comes out clean.
- While baking, prepare a clean kitchen towel and dust it with powdered sugar.
- When the cake is done, immediately turn it out onto the towel.
- Carefully peel off the parchment paper and roll the cake in the towel from the short side.
- Let it cool completely.
- While cooling, make the frosting by beating cream cheese and butter until smooth.
- Add powdered sugar and vanilla, mix until creamy.
- Once the cake is cool, unroll it and spread the cream cheese frosting evenly.
- Roll the cake back up without the towel and wrap it in plastic wrap.
- Chill in the refrigerator for at least 1 hour before slicing.

- For a gluten-free option, use gluten-free flour.
- You can substitute applesauce for oil for a lighter version.
- Try different nuts or add raisins for variety.
- Ensure the cake is completely cool before frosting to prevent melting.
