Instructions

  1. Soak the rice noodles in warm water for about 30 minutes until soft.
  2. Heat the vegetable oil in a large pan over medium heat.
  3. Add the beaten eggs and scramble until cooked.
  4. Add the shrimp or chicken and cook until heated through.
  5. Add the softened noodles to the pan and stir well.
  6. Mix in the fish sauce, tamarind paste, and sugar.
  7. Add the bean sprouts and green onions, and toss everything together.
  8. Serve hot, topped with crushed peanuts and lime wedges.
