- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 eggs, beaten
- 1 cup cooked shrimp or chicken, chopped
- 1 cup bean sprouts
- 1/4 cup green onions, chopped
- 3 tablespoons fish sauce
- 2 tablespoons tamarind paste
- 1 tablespoon sugar
- 1/4 cup crushed peanuts
- Lime wedges for serving
Instructions
- Soak the rice noodles in warm water for about 30 minutes until soft.
- Heat the vegetable oil in a large pan over medium heat.
- Add the beaten eggs and scramble until cooked.
- Add the shrimp or chicken and cook until heated through.
- Add the softened noodles to the pan and stir well.
- Mix in the fish sauce, tamarind paste, and sugar.
- Add the bean sprouts and green onions, and toss everything together.
- Serve hot, topped with crushed peanuts and lime wedges.
Notes
- You can substitute shrimp with tofu for a vegetarian option.
- Use gluten-free noodles for a gluten-free version.
- Adjust the amount of sugar for sweetness to your liking.
